Extraction, Identification and Quantification of Bioactive Compounds from Globe Artichoke (Cynara cardunculus var. scolymus)

This study looked at the best conditions for extracting bioactive compounds from globe artichoke (Cynara cardunculus var. scolymus), such as total phenolics, flavonoids, ascorbic acid, and inulin. The obtained results showed that optimum extraction of phenolics flavonoids receptacle bracts artichoke, when applying maceration room temperature, with 70% methanol 4 h. Genstin was major phenolic compound (57.86 25.6 mg/100 g DM) in bracts, respectively. highest content acid extracted parts using 1% citric solution 25 °C. In addition, inulin were autoclave 120 °C 15 min. most abundant essential amino acids aromatic (phenylalanine tyrosine), followed by valine, lysine, leucine but sulfur limited found parts. Our also suggested extracts might have a promising future management oxidative stress on gastrointestinal tract recommended an attractive ingredient developing functional food.
